Hey Jets Fans, it's Jenniphure from the Flight Crew here to share my favorite Carrot Cake recipe with you.
As you know, Valentine's Day is here, and baking a delicious cake is the perfect way to celebrate the spirit of love and friendship!
My passion for baking was ignited several years ago when I met Nettie. At the time I babysat her but now she is like a little sister to me. We both have a sweet tooth, so we spent a lot of our time baking together. She taught me how to improvise in the kitchen, and this recipe is compliments of her. I know you'll enjoy it.
Batter Ingredients
2 cups of sugar
2 cups of flour
2 tsp of baking soda
2 tsp of cinnamon
1 tsp of salt
1 tsp of vanilla extract
1 cup of vegetable or corn oil
4 eggs
3 cups of grated carrots (about 2 bags)
1 cup of golden raisins (optional)
Directions
Starting off, we're going to make the cake batter. Puree the carrots in a food processor and put them aside. If you don't have a food processor, don't worry, you could also use a blender but it will take a bit more patience. Next, in a mixing bowl, sift the dry ingredients. Then, using an electric mixer, add the vanilla extract, oil, and eggs one at a time to the dry ingredients. Lastly, fold the pureed carrots into the mixture.
Once you are finished making the cake batter, evenly divide it into two round, 9-inch greased cake pans. Cook the cake for 40 minutes at 350 degrees.
Frosting Ingredients
8 oz of cream cheese
1 stick of butter
1 box of confectioners sugar
2 tsp of vanilla extract
1 cup of walnuts or pecans
Directions
While waiting for the cake to cool, you can make the frosting. Begin with room-temperature butter and cream cheese so that they're soft. Using an electric mixer, combine cream cheese, butter, confectioners sugar and vanilla. Use the nuts later to top the cake.
Hint: It's always fun to get creative when decorating your cake. For Valentine's Day, you can use the nuts to make a heart on your cake, and perhaps some pink or red decorative sprinkles. Bon appetit!
