Hey, Jets fans! It's Lauren Z. from the Flight Crew. I hope you're all having a wonderful holiday season. I can't believe 2010 and the Jets regular season are coming to an end, which means the New Year is right around the corner.
I'm sure many of you are figuring out your New Year's Eve plans and in case you're hosting or attending a party here's a great recipe I love to make and it's always a big hit for any party!
BRUSCHETTA
6 oz. grape tomatoes, quartered
¼ cup olive oil
Handful of basil leaves, chopped
2 cloves of garlic, minced
¼ cup balsamic vinegar
1 ball fresh mozzarella, sliced
1 loaf ciabatta bread
Sea salt and pepper to taste
Preheat oven to 350 degrees.
Slice the ciabatta bread down the center into two halves, then slice each half into four pieces. In a bowl, mix the tomatoes, oil, basil, garlic, vinegar, sea salt and pepper to taste. Toss until evenly coated.
Place the slices of bread onto a baking sheet and top with slices of mozzarella cheese. Bake in the oven for 8 to 10 minutes or until the cheese is melted and the bread is crisp.
Top with the tomato mixture and serve immediately. Enjoy!
